They don't really make much use of "programming languages" as we understand the term. A lot of their computer systems are perfectly capable of understanding natural language (C-3PO can obviously converse in natural language, and R2-D2 can apparently understand it if not produce the tones himself), and simpler systems don't bother with programming languages since you can just tell a protocol droid to translate the program from natural language to binary. Essentially, there is no need to have programming languages when you have at least some computers which can understand natural language perfectly well, and those can program the simpler ones.

It's basically the same deal as how they could make Holodeck programs in Star Trek. A human (or other sentient being) would tell their protocol droid something like "Program this binary load lifter to unload all the cargo pallets from the ship", the protocol droid would convert that into the lower-level concepts that a binary load lifter can understand (e.g. go 1 meter forward, turn 30 degrees left, pick up cargo, etc) and enter the corresponding machine instructions in binary.

Most higher-level droids have some ability to understand natural language, C-3PO type droids can obviously converse with sentients, while R2-D2 type droids can't generate the tones of human-like language, but are apparently able to understand it.

It is probable at some point that humans do enter programming directly into droids/computers, due to the chicken and egg problem (if the protocol droids do the job of compilers, who programmed the first protocol droid?) and the fact that C-3PO seemed surprised at the idea of machines making machines in AOTC. This is likely done using symbolic assemblers or something similar, with a fairly low level of abstraction - because once a system is complex enough to support a high level of abstraction, it's able to essentially finish programming itself.

It's probably a host of different computers & systems, running on software you'd barely recognize as an OS. Sure, some of it may be things that are more familiar like QNX (realtime posixish unix), but mostly it will be small special purpose systems, and they'll all be talking over an industrial bus made for vehicles, like CANBUS is in cars today.

It makes perfect sense. Trade Federation made the early death star plans and they would use a programming language of theirs. Hell you can even explain the Rogue One death star problems being the imperials trying to make sense of trade Federation programming. The Emperor having killed most of them.
