I just found an Apple IIe at a recycling center. It appears to work fine, it boots up to a screen that says "APPLE ][". I don't have any software to use with it, so that's the extent of my testing, however.
What should I do with it? How can I get software running on this thing? Is there anything fun to do with it?

There are collections of Apple ][ software diskette images on the web. You would need either a working Apple ][ or a Mac to move stuff to floppies.
You can buy system floppies online. Get ProDOS 1.4 or better.

Since it says "APPLE ][" instead of "Apple //e" you appear to have the "unenhanced" version. Not a huge deal, desu, you just won't be able to run some software later in its history.
As is, you got a BASIC programming machine. You can get some floppy drives, but will then have to figure out how to get disk images to floppy. Or you could look into SD card adapters people have developed.
