Embedded experience is great if you live near a hackerspace.

Do you know any proto boards? You could put together a quick class in Arduino or rasberry pi or some variant of that while you wait for a job opening. Look into local community classes. Just title it "Hardware Hacking" and work them up to a router using openWRT or something.

Actually yes, I was made redundant a few months ago, along with ~100 other people. I was paid nicely (and got a better paying job straight away) so I hold no resentment, but the company was not smart in who they let go.
