does UEFI provide any real benefit, or is it just garbage? I have it disabled on my devices because it only ever seems to cause problems.

Well, first off, it allows you to boot easier than ever before. One efi file on the root partition and you're set (if the FS is recognized by the UEFI).
Second, it actually is an OS by itself: you can run a shell, you can write a module for it, you can even launch a browser if you want. Possibilities are endless compared to BIOS.
I personally use it for NVMe SSD.

It's complete garbage and it's often badly implemented. Some mobos can be bricked by wiping some UEFI registers exposed to the OS.
Your OS, or any mallware with enough privileges can now alter your mobo's firmware or destroy it. Windows by default loads an executable with a certain name from your mobo's non-volatile memory if present and executes it with administrator privileges.
ATM I have a crappy Medion netbook which ran a few linux distros before. Last week I tried to install Antix which its installer fucked up my UEFI and now I cannot boot anything from its HDD other than windows 10. All other installers fail and restoring the BIOS to default cannot fix this.
long rant. TL;DR: UEFI is literally mallware.
I can't count how many solutions to problems include "switch from UEFI to legacy" as part of the instructions. It ads more functions but it doesn't retain basic preexisting functions for whatever fucking reason. I expect there to be a new standard introduced within the next decade or so.
UEFI is somewhat more modern than BIOS/legacy. It was made by Microsoft though. That's a 100% guarantee it will be buggy and have gaping security holes.
