I've been on a linux machine for a long time and now I have a new build I want to put Windows on.
Whatever happened with Windows 10, I know there was a bit of controversy about how/what they track?
Should I just stick with Windows 7?

10 works just fine. Telemetry has been around since XP, only this time user has to opt out instead of opt in. Privacy settings and group policy are at your disposal in both home and pro versions. I got free upgrade and recently did a clean install of 1607. Works flawlessly.
