I want to get some experience working with a gentoo based system, I've been using linux for around 5 years now, and it's something I've never tried before. Most of my experience is with Arch.
Is Sabayon Linux worth starting off with? /g/ ?
Why don't you just install Gentoo itself?

Sabayon is simply great, very easy install, a lot of features, very powerful OS, runs great with wine for use windoz programs or games like 2hou or VNs.
It was my main OS till I start to try new things but I recommend you and a very good start point.
It's very easy to use but lacks support. It's all well and good if you just use the inbuilt package manager but that has older packages and if you try and and mix in packages from source it gets messy. if you can use arch for 5 years you can use gentoo.
