How do you tell which tablets have a proper digitizer as against a stylus that so happens to work with a capacitative screen? I'm interested in writing notes, and a few tablets have a stylus, but I can't tell which ones are going to work properly for handwriting.
Search for tablets with Wacom digitizers. Watch reviews you scrub. Lurk more.
There are no tablets with Wacom digitizers in them, the closest you'll get is a Galaxy Note smartphone (not a Galaxy Note tablet).

Doesn't the surface use a digitizer?

Look for pressure sensitivity.

Get an iPad Pro 9.7 with Apple Pencil.
It's the best experience you can get with a tablet and a stylus.

Except for the part where it runs iOS

Way too expensive, I was looking for something up to the £300 mark. Besides I don't want to draw, I just want to write out my notes.

It's nice, it uses the same display and digitizer like the Surface Pro 2, the keyboard dock feels great to type on and it has a magnesium case. I still managed to fuck up the display quickly because I felt the need to bring it with myself to concerts half the country away and get black out drunk.
X220t/X230t would be a better option in some ways.
