I'm currently with a small-scale ISP that offers unmetered access to certain services such as netflix I have been informed by employees at this ISP that they simply pretend this service doesn't exist in order to not track data usage.
Now here's my question, can I somehow route my data through this service or pretend to be routing through them without my ISP realizing?

How will using VPNs even accomplish this? my ISP will see me connecting to the VPN and still count all data usage right?
I'm obviously not very smart when it comes to networking but I'm thinking the only way it's possible is if i had a proxy/tunnel into their servers which would make it look like I'm just connecting to them normally correct?
There's something you can do with DNS & HTTP headers to fool ISPs into thinking your using a different site

No, you can't. You're not in control of the network once your packets leave your router. If you had a device upstream that could capture your packets and rewrite their headers with the proper IPs, this might work. But in your case, there's no way.
