Do a minimal arch install(no xorg shit). Print the gentoo handbook and tell him you respect his freedoms too much to just preconfigure his system for him. If you are feeling nice you could stand by and answer questions while he's compiling things. Beginners seem to have a hard time wrapping their head around use-flags, non-free licenses, and kernel configuration in my experience.
