What is your opinion on debian. I'll be running XFCE,

XFCE with debian is fine. Use what you are comfortable with, do't like it? Install a different DE/WM, that's the beauty of GNU/LINUX

Debian + XFCE has always been my choice for lightweight systems, personally I prefer Mate these days for desktop stuff though
