But how do they process this?

It's basically done in tiers.
Your local ISP has a DNS server. When you enter a URL in your web browser, a DNS request will be sent to your ISP's server. If that server has the correspoding IP address it will send it back to you.
If your ISP don't, then your ISP will usually forward your request to a "bigger" DNS server at a higher tier, and on it goes until you reach some type of backbone-ish DNS-server which should have basically ALL information about URL-IP address pairs in some huge database.
There is more nuance to it, and more correct terminology but that is the gist of it.
