I have a .001 file without its accompanying .002 file
does anybody know how I can open the .001 on its own?
7zip gives me an error saying it "cannot open as archive"
just copy and rename the copy .002

you can sometimes get a partial file or some complete files if there are multiple. You need to use the cli to do it though, and I forget if it needs any special flags.

If the file in the archive is a single large file, you're screwed. Part of the file that would be in .002, .003, etc (parts) are missing, zero chance of getting anything useful from that archive.
If the archive is multiple small files, then you can try to use the command line to get some complete files from the archive, though I wouldn't count on it.
Either way, use 7zip to see which case it is (you can probably see what type of file it is by opening .001 in 7zip file manager).

The index of filenames and directories in the archive is in the last file of the archive. While you might be able to get files out by disecting the .001 file, there's no easy way to get anything useful unless you want a "learning/research project".

Nothing prevents you from recovering part of the large file, if you've got the initial bits. That could indeed be useful.
WinRAR shows which files are in a partial archive and whether they are completely contained, end or start in there. You can extract everything as long as you check the "keep broken files" option.
