If you're really worried about this, you could just train for it. Check some common questions from internet, set up a microphone and then record yourself answering those questions.

It feels really weird and unnatural at first, but it really does help giving some confidence.

There are whole books dedicated to technical interviews. Read one.

Just to talk out of my ass anyway:
-Have some decent interviewing form. Try to be polite and courteous. Don't freak out if they ask something you don't know.
-Dress appropriately if you are going on site.
-Search for "java technical questions" since most interviewers are too lazy to come up with original content.
