Why do most of you guys defend FOSS when it's inferior to Proprietary Software 90% of the time

It's not. Most software is shit all the time. Libre software is usually free and well documented.

well what is your use case? a lot of things are equally easy in both
Even if you don't actively contribute to the development and improvement, there are other people who do. You don't have to wish a piece of software did something, you can make it do it.

Simple.
Propiertary software focuses on user experience because their primary objective is to sell users software. To make software attractive to users, it has to have qualities that users want - functionality, yes, but also aesthetics, ease-of-use, friendliness, documentation, support. Otherwise, a competitor will come and sell your users better software.
With FOSS, there's no monetary incentive to make software friendly. After all, the software is free - whether anyone actually uses it or not doesn't change a lot, and only certain classes of software can hope for donation-based funding.
