The point is that Turing helped prove that an entire field of math had a very specific application in the birth of a new physical science, and that all of the questions that that science could answer fell inside of a specific set. Before he came along and actually made the parallel between the abstract math and computing, people were wasting their time trying to solve shit that would later be proven to be unsolvable.

Clearly defining the limitations of a science with proof is no small task.

Understanding the limitation of what a computer can/can't do doesn't stop you from building a computer you mong. The point is, is that people were spending a bunch of time/energy/effort trying to solve problems that fell outside of the realm of computability/recursion theory.

To put my point into a more digestible/general format, what you're saying is, is that a person has to be aware of the capabilities of some machine, in order to build that machine.

Turing took a field of mathematics, and applied it to something that was happening in a current science, and then formally proved that something that was on the cutting edge of mathematics could be applied to something in a physical science. This is something that most people could never even hope to do in their life.
