A 1060 should do just fine for 2560x1080, I use a 1070 with my 25UM57-P and shit runs at 100+ FPS most times.

That monitor is shit. Pixel density is a thing and at UW 1080p even my 29 inches start to show its flaws when I sit too close to it. 1060 gtx is enough but I'd rather go for 29 inch one or buy a proper 1440p one and a 1070 gtx.
