You can read up on computer networks and learn enough to pass an interview fairly quickly.
However, getting used to the Cisco CLI is going to be a pain in the ass. Assuming they use Cisco gear, which is fairly likely. I do not see you doing it in a short amount of time, at least to the point where you could pass a practical test. You might be able to spew enough buzzwords if they don't test you, but a few days into the job they'll notice.

I don't think IOS is too hard, and at this point in time it's very easy to find a step-by-step guides to configure Cisco routers/switches for any purpose a regular ass company might realistically need.
