we literally can not see more color than what we can see, it's a hard physical limitation of the wavelength we can perceive.

and even than, unless you have an amazing monitor, distinguishing VERY slight shifts in color is near impossible.

Now, on the color banding side, i'm 100% on his side, but again, in a game scenario I have yet to see a game where banding was an issue that I did not cause due to putting gamma or brightness way up to see.
