pretty much practice. After a while you will recognize patterns. Hex is easy due to the 0x offset or no number being higher than 7 or no letters above f.
Base64, again just looks like it but the = at the end can give it away.
Third is easy as well, if you don't know binary you should leave.
And last tries to catch you out but you can see a pattern and the = at the end again.
It just comes with time and working with it.
