Is there any RAID solution where you can just pop a couple disks into an enclosure, flip a switch to what kind of RAID you want and then connect it to your computer and format it like any standard external hard drive?

Any of the SAS connected SAN devices work like this. Like the HPE MSA series.

Won't I have to connect to it through FTP or something then?

No? It'll work like one big USB drive.

It has a network port just so you can login and configure RAID.

But is there any desktop sized enclosures that you would recommend?

I'm aware that Imgur.com will stop allowing adult images since 15th of May. I'm taking actions to backup as much data as possible.
