Because demo's and videogames have entirely different bottlenecks a lot of the time. Because a demo usually only handles the data on the GPU. There's very little CPU-GPU back and forth. They generally can use very small sets of geometry and do most work in fragment shaders. They also use rendering techniques that wouldnt be particularly convenient for game use.

Games on the other hand do ton of geometry, often have a lot of texture data to load and depending on device they might not even keep an entire scenes textures loaded at full resolution at all times.
Generally demo's aren't made to be impressive in the same way games are made to be impressive.

That said. There's a lot of inexcusable bullshit in videogames today. I'm pretty sure it's because there aren't enough talented programmers, teams are too large to produce something that fits well together and the design department doesn't understand or care about the limitations of what they've built.

Also coming here like you've just discovered demo's and jerking off over them looks awful.
