Any reason I shouldn't just use Fedora Server for an office network's server/router? Fedora seems stable enough and it simplifies things since the clients will run on Fedora Workstation.

CentOS or Funtoo
Compared to CentOS the main difference is the support cycle is shorter, so you'll have to update the systems more frequently. Packages will be newer and update more frequently which can mean more frequent breakages if your company's software relies on a specific version of a package for some reason.
