I can purchase domain name that would be basically my surname.co.uk for £7 a year. My aim is to get an email address that would basically be [email protected].
The problem is that I don't want to host email server on my own. Is it possible to use my own domain with e.g. gmail or outlook?
Has anyone done it before? Would it make my CV look more professional?

you can use gmail with your own domain name, fully integrated, but it might cost some money, I'm not sure
another possibility is just setting up a forward email, so [email protected] is forwarded to [email protected] (but you cannot reply with [email protected] without making it look suspicious to other email servers)

it doesn't matter

Nah, just of polish origin.
What is Google Apps

Google Apps is good, but Yandex does the same thing for 0$. Same botnet, different prices.

>wanting mail to go to a server different than your own registration
It's called an MX record.
A mail exchanger record (MX record) is a type of resource record in the Domain Name System that specifies a mail server responsible for accepting email messages on behalf of a recipient's domain, and a preference value used to prioritize mail delivery if multiple mail servers are available. The set of MX records of a domain name specifies how email should be routed with the Simple Mail Transfer Protocol (SMTP).

zoho.com has very good free mail hosting
You can do that with forwarding, but there might be some slowdowns between sending and receiving emails.
The other option is Google Apps, but that costs a few euros/month
