Radeon _was_ worse. Past tense. Now it still lags behind performance-wise, but is much better at integrating with the open-source community. Thus for example the open-source radeon drivers are servicable, with very good OpenGL coverage. The performance is usually worse than the binary blob drivers, but it's still decent. Heck, there's an (unofficial) open-source Vulkan driver for radeons.
Nvidia is still ahead with raw performance (but only when using their binary blob. Don't even try using nvidia with opensource drivers) but it's also not very opensource-friendly. Technologies like Nvidia Optimus can cause serious problems (I'm using startx on an Optimus laptop since I never know when a driver update will b0rk the graphical login) and then there's the whole Wayland problem (nvidia wants a different approach to memory allocation since the one everyone else is using will cause their cards to perform slower).

I am using debian with gnome and I didn't add any extensions. I enjoy using it. It's not what you might be used to, but when you understand the workflow of creating virtual desktops and switching between them it becoms really comfortable.

By "topbar" do you mean the very upper-most bar with the time, and info about wifi/sound/battery, etc.? Because I don't want to remove or hide that at all.

Or if you mean the fat window title bars:
They're still there in GNOME apps, because the space is utilized, but outside of that titlebars are hidden when maximized thanks to the Maximus ng extension.
