I'm sick of all the spying and botnet stuff that they keep adding to windows 10, but I'm not ready to give up gaming. What Linux distribution would be the best for gaming, coming from someone who's used nothing but windows their whole life?

Ubuntu would be fine. Keep windows and use a dual boot. About the best you can hope for. I like Linux but it's limited. Especially since you use windows. And you'll get get sick of all that sudo apt-get bullshit.

Ubuntu has the best steam support, and there are 5479 games on steam for linux.

Ubuntu 16.04 is a long term support release, so its likely to be the target platform for many new linux games.
