I get similar issues, leaving my computer on for days, I will see 10gb memory use with nothing open.
Similarly I run out of memory when playing Overwatch, 6gb used out of 16...

A memory leak might not be attached to the process, especially if it spawns a new process to do so, if there are buffer overflows, or if it's windows hooks that are misbehaving due to how they're called/what's been passed to them. Granted, the hooks should know what the fuck they're expecting and reject anything that would cause problems, but it could be Doom that's creating the issue by passing bad data.
