I was thinking about it to provide a good answer but over the course of this year I switched lots of my use on proprietary software to FOSS. But I can give two shots.
Photoshop, because of it history and features can't be easily matched(?).
Matlab, because of it's gallery of matrices, databases and other convenient features (this I could say can be replicate with some work).
Maybe other profissional or editing tools, business managment like Bematech software?

Octave is literally Matlab

I use both octave and matlab, because sometimes I need to use some matlab intrinsic database (some needed on textbook's questions), provided by matlab.
But as the poster said, some galleries were being ported and its good. Sometime ago I needed to generate sparse matrix and couldn't find an appropriate way to do it on Octave.
Besides that, I really enjoy the ways Octave can be recompiled with BLAS and other optimizations.
