I don't have a real necessity to run Windows anymore. I don't really play games and the games that I do play (on rare occasion) on here I can easily run using PlayOnLinux.

I used Ubuntu about 5 years ago for about 2 months but back then I was totally into my gaymes that I didn't really see the reason to make a huge hop like that. I enjoyed using terminal, I know I'm well capable.
However now that I'm older I feel like a switch would jumpstart me into becoming productive again since I got extremely lazy

For DE I'd recommend budgie or MATE.
Favorite text editor is nano, i just use the default transmission for torrents, midori or opera for browsing, vlc for music and videos, terminology for terminal and I'm sorry but I don't think anything will work with iphone.

Kernel, glib and coreutils are nearly the same. Maintaining of the official repo, documentation, wiki aren't. Arch is for schoolkids who is trying to learn CLI. For literate people it's better to use a more reliable distro like Debian.

I install dolphin as the file manager, and that has a built in terminal, konsole.

Most people who contribute to software is from Europe, and there android is more popular.
But what do you want to sync?
On android I use kdeconnect to sync notifications, nextcloud for files, carddav for contacts and caldav for calendar.
Then I use syncthing for syncing music while the phone is charging.

You have to try out different things and see what fits you.
I think you can use i3 with all of them, but you might loose some functionality.

The VM is one of the most important parts of a DE.
The DE is about making a cohesive feel.
The panel, the settings, the launcher, the hotkeys and the applications can created in different ways.
A lot of people here claims that they do not use a DE, because they do not have some parts of that package, but I have not seen any screenshots from the same people who prove that part.

Would give it a try but I guarantee (bearing in mind I only use it for browsing and streaming movies) that it won't perform anywhere near as good as my current arch installation on my old yard sale xps. Looks pretty, though.
