Thinking about getting pic related if I can swap out the SSD. But something with a bit more grunt and a touch screen would be nice

Majority of them are either soldered to the board or part of the board itself.
Havent seen one with a serviceable "SSD" but im not going to say it doesnt exist.

And most have their ram soldered on as well. Although o thought the acer and dell models weren't like that. It may differ between models in a given vendor. I know I can buy a nearly identically speced chink laptop from aliexpress as many dell models for 200-300 cheaper than the Dell.... but all chink ones are soldered on.

what's wrong with refurbished laptops?
I've seen lots of factory/seller's refurbished macbook airs and pros with great specs just for 600-800$ and plenty of good feedbacks on them.
