I still have my iPod touch 4th gen that dual boots iOS 6.1.6 and 5.1.1. It's so much more stable and nice looking than anything Apple is shitting out these days. All hardware that supports iOS 5 and 6 has a headphone jack. Feels good man. I highly recommend buying one and playing around with Kloader. It's a really powerful command line tool that allows for some seriously cool things on devices with exploitable bootloaders.

Well, there's not much of what you're asking for. There is App Time Machine (http://www.apptimemachine.com/) but it's kinda shit. I don't know much about it. It is included in custom iOS firmwares like Whited00r, Grayd00r, Redd00r, and Blackd00r.

I already told you, I used Kloader. I also needed Limera1n to exploit the bootloader to bypass signatures and stuff. iOS 5.1.1 is tethered because I was dumb and didn't save my hashes. 6.1.6 is signed and boots fine though. There are YouTube tutorials.
