Is there a good way to get data off of an HDD when all the pins are broken?

You can get an identical model of the drive and swap the platters in a clean room environment.
That would work.

bearing in mind that this isn't quite as simple as swapping plates. Generally the drive will require re calibrating IIRC.

The pins on the connector? If so, you could solder a new one to the PCB at the bottom of the drive. (Not inside the drive enclosure - keep that one sealed)
Don't bother trying >>56546749, you don't even have the tools to properly disassemble it without scratching the platters, damaging read heads, etc. and it almost surely won't work anyways.

keeeek
take a spare sata cable, cut off one end and solder the wires onto the board
