Because none of the actual data from the source ends up in the hash, so to make it reversible it would no longer be sha/md, it would no longer be the size it is.
The closest we have gotten is pigzip, and it still has some issues.

A hash by definition is a one way function.
They serve, among other purposes, to create a "signature" from a data set to check the integrity of said set.

how would that be maximum? an md5sum is already smaller. And you could get better compression than either of them if you made CRC32 reversible.

Do you even know the ultimate compression method that even comes with windows? Just right click on a file and click "create shortcut". The file created is so small it's unbelievable. Be sure to tell all your facebook friends about this awesome life hack.
I had an older co-worker who stated that he was able to reverse an MD5sum, despite clearly not knowing what a hash function way.
Tried to point this out to him but constantly augured that he could.
