That's not Gnome being bloated. That's your distro's gnome meta-package requiring a lot of packages you don't need.

Just install gnome-shell. If even that pulls more than necessary, it's your distro's fault, time to change it.

Alright, fuck I finally figured this out

>sudo apt-get install gnome-core
>Copy list of packages installed to a text file so I can easily install them later
>sudo apt-get remove empathy totem gnome-dictionary gnome-contacts
>Copy the programs Ubuntu wants to auto remove to a different text file
>sudo apt-get install $(<secondtextfile.txt)
>This will mark those programs as manually installed so autoremove won't try to delete them
