Consider getting a HP Microserver Gen8 G1610T 819185-421, pop an SSD in the fifth (optical disk drive) port mounted in the top with a Berg-to-SATA-power connector adapter, and put /boot on microSD so it finds the SSD.
The cashback deals are legit (if you follow all the instructions very, very carefully - look out for the serial number crap!) and it is an extremely good value piece of low-end enterprise hardware. It's been cheaper than it is right now, but it's still a good deal for less than £200 for a low-end 4-bay server - plus the disks of course.
