I don't want to pay out £500 for a 2TB SSD (Samsung 850 EVO, £700 for the PRO) when I can pay £80 for 3TB on a fair HDD.

Yes and no. Anything larger than 256GB for OS & programs, perhaps a few games? Meme.
512GB can be useful for a steam library if you really wanted to do that, but I'd say that's the biggest you could possibly need for that.
Hell, even 256GB dedicated purely to games would be plenty for most.

Outside of some users such as Netflix or YouTube, having masses upon masses of SSD storage is the biggest meme ever.
Outside of YouTube companies like Linus Tech, anything even close to 10 SSD's is a hardcore fucking meme.
LTT only gets away with an SSD server because they produce a lot of videos they constantly want to scrub through and SSD's save time in that regard.
Whether their content is WORTH the effort is subjective. Whether the SSD farm HELPS them is objective.

Cost is the only legit reason. Despite that hard drives are disadvantageous in every single way. Once SSDs are cheaper which will eventually happen, hard drives are dead. Probably way earlier as SSDs are a lot more reliable, more energy efficient and simpler to handle.

most games today are normally 40-50GB in size. factor in that you need to sacrifice about 10-15% of your SSD for over-provisioning, 256GB becomes the minimum.

Another downside is that there are telltale signs an HDD is failing so you have time to move your data if you are not mirroring it, without monitoring your SSD there are no tale tale signs the SSD is dying and it will just go in an instant.

These are two disadvantages of SSDs to factor in beyond cost.

Two 2tb HDDs in RAID 1 is still way cheaper (and more safe) than one 2tb SSD array.
