Are you talking about this, the "merge tabs and apps" option? They removed that option back in June with Chrome 51.

If you remove the youtube app it will allow you to have it in separate tabs as it will no longer auto refrence the app, also you will be able to save youtube videos in chrome by holding your finger on the video and chosing save thus allowing you to play it in media player in the backround.
