What's a good service that can used to gather feedback from web site users?
Github requires people have a Github account to report issues, and I don't think my users have Github accounts.
what kind of feedback are you looking for?
if you can measure it yourself (e.g. how long did they spend on the site), just add tracking scripts.
if you want open ended feedback like "there's a bug here", then you either need to roll your own bugtracker or fall back to email or something. adding a little "found a problem? email [email protected]" footer to every page should be easy and will do 90% of the job most people will need done.

I feel like there's gotta be a GitHub bug-tracker like thing that doesn't require account signups.

And you can't code a simple feedback/email link on the site because...?
