I'm about to buy a 250GB 850 EVO, as it has the best performance

Go with sandisk faster cheaper and 10 year warranty. Besides I hear Samsungs warranty process is a pain to go through

aside from slowing down to a crawl for file transfers that take longer than 5 seconds, not really.

Evo 850 user here. Literally no downsides. Also bonuses like a long warranty and burst mode and other features that improve performance and longevity.

For very large file writes (GB+) it can end up being slower than other SSD's. For 99% of normal use though it will be faster and more reliable than other drives. Samsung's design for 3D NAND makes it more reliable than other manufacturer's because of how the cells for storing data work.

Sandisk Extreme Pro series still uses 2D planar floating gate NAND. They're achieving their "reliability" by having 16 die packages in each of the 8 flash chips, which means they're heavily relying on wear leveling rather than genuinely having more resilient flash memory, which is accomplished by over-provisioning. Their warranty and MTBF is estimated for a lower drive write/day than Samsung. You would legitimately be paying more for a drive estimated to have a shorter life span.
