Because Notepad is completely inadequate as a simple text editor. It causes this exact problem for people countless times. Windows really should come bundled with a simple text editor which you can at least recommend for someone to use for simply editing plain text files without screwing them up. Leafpad and even Mousepad are as simple and as lightweight as is needed for a Notepad replacement, and they are actually usable without ruining line endings. Microsoft should replace Notepad with something functionally equivalent to Leafpad.
