Is it just me, that hates how thin phones are now? Seriously, I'd much rather a phone was twice as thick, for just a small amount of extra battery life. I usually get thick cases, just because it's easier to hold, and doesn't feel like it will smash to pieces, if i hold it too hard.

Probably. I carry my phone around all day with me I want it to be as portable as possible. That's why I also hate 5inch+ phones, they are a pain in the ass.
As long as it lasts a full day I rather have a thin phone than anything else.

They have to be, they're meant to be phones not portable laptops. Their main function is to be small devices that recieve and send calls, texts, and let you web browse a little.
You're asking for something out of spec which is not profitable. However some companies are still nice enough to give you a phone with a removable battery.
Anyway companies could easily make a 1 inch thick phones with active cooling, a 10,000 mAh battery, and an i7 x86 skylake processor. However this would only appeal to a few individuals so it's not a market worth investing into especially since it would weight like 2KG.

I'm not asking for something like that. I'm just saying, instead of 8mm phones, why not something more like 15mm, it would easily fit in your pocket, and would have more room, for better chips/more chips. (with the possibility, or layering multiple chips above one another.)

Same problem, no market. The way phones are constructed right now are just perfect to attract many customers with money. It turns out that people only care about "muh thinness" for some reason and companies are doing everything they can to please this meme even if it means making phones that overheat 1ms after you open a simple app.
Hopefully optical processors will come around in a few years and at least make thin phones not overheat anymore at least.
