So, I've been thinking about upgrading my I5 2500k for an i7 2600k, and dropping some faster ram in my motherboard.
Having an I7 over an I5 seems to matter more in modern games than it used to.
Average frame rates are about the same between them but minimum framerates are significantly higher than with an I5.
And to be honest, that is what matters, I want to get rid of those big drops in FPS.

Currently running my 2500k with an oc'd 980ti and I game on 1440P

Why?
If your 2500k isn't dying right now, don't upgrade until there's actually a need to.
The difference between the 2500k and the latest 6500k is minimal when both are overclocked.
