Emacs and Vim are actually the best because they're pragmatic and infinitely customizable/extensible. Sublime is almost entirely eye-candy, with a few neat features and keyboard shortcuts thrown in. Plus it's proprietary, making it even more restrictive.
I guarantee that you wouldn't be comfortable in Sublime if you took 3 weeks of dedicated effort to learn either Emacs or Vim.

You gain a very versatile tool that gives you complete control over your work flow.
There are a myriad of useful things in life that require practice and training to use effectively. Why bother learning how to ride a bike when you can just run instead? Why bother learning how to use Emacs/Vim when you can use fancy Notepad++?

Just started learning vim. Spent a day configuring a few plugins to make it comfier for programming, and am getting the hang of it. Looks pretty nice, too.
