Generally in the non-upgradeable models, all pads are occupied. So if it's 4GB it'll be two 2GB ICs soldered in. 8GB, 2x 4GB. So no, there'll never be an unoccupied pad.

However it is technically possible to desolder and solder your own. However, where are you going to source the ICs?

Most companies have been practicing this for decades. Apple has the largest margins by far though for RAM (and a lot of other things).
