In light of the Vulkan/DX12/Async drivers and such (I'm not too knowledgable on the driver side), should I trade my Gigabyte G1 980TI for a fury X?

No, because the 980Ti boosts clocks so high it can hide its deficiencies in async. I would be more compelled to wait for Vega/GP102 to futureproof because the 980Ti resell value should not be too bad until leading up to Vega, iff the Vega pricing is also as upsetting as the Polaris pricing.

No. Vulkan won't be a standard, it'll be on a handful of larger budget games.
Even with the general beatdown the fury x is giving to the 980ti in DX12 it is not an economically sound switch. Plus it heavily depends on what resolution you are playing at.
