Why the hell do motherboards no longer come with this?
Shopping for a new HTPC at the moment and it's impossible to find a low to mid range motherboard with it

Nah, just none come with it. That are available in Australia at least.
Need 4 or more SATA ports, 1151 socket, and a M2 slot. Can't find anything of the sort locally.

Going to an old pair of Roland Cakewalks, good speaker/DAC combo and couldn't really be assed moving over to something else.

optical if i remember right compresses on more than 2 channels, could be wrong, but hdmi is the only way to get full uncompressed audio.

it technically allows up to 6 uncompressed channels and that kinda made it to the spec. But it happened right after everyone stopped caring, so there are literally zero devices available who work with the updated version of the spec.
I personally feel bummed about it, as I use S/PDIF myself
