Although a bit of shielding makes the effect neglegible. Spiral cables are designed to functionality, ie streching.

Not exactly. A twisted pair will cancel out its own electric field, but it won't prevent the field emitted by other wires from interfering. It will, however, prevent itself from interfering with other wires.

Now, if ALL of the wires are twisted pair, that's another thing.

Twisted pairs work with differential signals where conductors carry equal but opposite signals. The pair, however, will be induced with equal but common noise which is rejected at the end point differential comparison.

Hence they reject common mode noise in their intended application.
