Do I need to keep 2 sets of cutting diets for both these numbers? i.e. days where I lift and days where I don't
How the fuck do I even write a cutting diet plan for these numbers anyway? I know 40/40/20, but how do I know exactly what food and how much of it I should be eating each day?

use myfitness pal and experiment with serving sizes of the foods you usually eat until the macros line up where you want them. oats/bananas/lean proteins/natty nut butters/whey/veggies/etc. once you figure out the proper serving size of the foods you eat its fairly simple. cheers

No, eat the same on rest days.
