Here's a typical day:

Breakfast, oats with fruits and nuts. +1000-1200 kcal.

Dinner is a big ass bowl of lentils or beans, a big ass bowl of barley, rice, millet and a big ass bowl of mixed greens. Usually some sweet potatoes to top it off. +2000 kcal.

I don't really eat much during the day, just random snacks like a banana and apple when I go out biking.
