Would it be ok to swap squats and OHP on the madcow 5x5 routine? I've been lifting for 8 months, I have been stuck at 120 lbs OHP for so long, and I want that god damned 1pl8 so badly. I am eating enough, I'm sleeping enough, all my other lifts are progressing fine, I've been using microplates and everything.

Why? I thought 3-5 was the range for strength gains, anything above is hypertrophy territory?
I thought the only way to get better at something was to do that exercise, like you don't do assisted chin-ups to get better at chin-ups?

Do dumbbell OHP for a while. Might be some secondary muscles fucking you by being underdeveloped. Also increase volume like some anon said, if you can. Increased muscle size correlates with better strength output.
