Been doing a hypertrophy (8 - 12 reps) for a couple months now. should I move onto a lower rep routine now like 5 x 5 to build strength? thanks

Yes, whenever you stall with increase of weight in a specific rep range, you should change rep range and increase weight there.

why not just do a basic linear periodization type deal? do sets of 10-12 reps until you start running into trouble, then knock it down to 6-8 reps, then knock it down to 4-6 reps, then repeat
